How can I judge someones mental behaviour from his/her body language or Non Verbal Communication?

that takes some training. visit your local library, you should see some books on the subject. but fidgeting and looking down and away is usualy a sign of lying.

some simple one:
lying: crossed anything, non eye contact, not to the point

there are books on it, goto your local book store or library to read about it.
